Ingredients:

Keeping it simple for this easy summer sandwich with:

  • Cucumbers: The main star! Crisp fresh cucumbers either straight from the garden of your favorite farm stand! Slice em' thin!
  • Soft Bread: I love a great, soft white bread for this particular sandwich. Whichever your standard "white bread" is in your house - sourdough, Mrs. Bairds, anything your family enjoys! Whole wheat sandwich bread is also a delicious option for this classic sandwich.
  • Cream Cheese: Adding cream cheese to the herby spread for this classic sandwich those fancy tea-time vibes!
  • Mayo: A great mayonnaise adds the perfect amount of zing to this sandwich spread. (I don't recommend a sweeter mayo or mayo substitute like, Miracle Whip. You want a standard mayo for this.)
  • Herbs: Fresh garden herbs like dill, parsley, and chives make for a delicious fresh moment in this sandwich spread.
  • Seasonings: Garlic powder, lemon zest, salt, and cracked black pepper.

Steps to Prepare:

STEP 1: Make the spread

Combine the softened cream cheese, mayo, garlic powder, and pepper. Stir to combine.

Fold in the fresh dill, chives, parsley, and lemon zest. Season to taste with salt.

STEP 2: Spread onto bread

Spread a thin layer of the cream cheese mixture onto the inside of 4 bread slices.

STEP 3: Add the cucumbers and finish the sandwich

What other types of bread go well on this sandwich?

Any type of sourdough is a winner in my book on a cucumber sandwich! For kiddos, I usually prefer a soft sandwich bread for this, but adults, get creative with it! Crusty white or whole grain sourdough (maybe one with rosemary or thyme baked into it!), or a soft white Italian loaf would also be wonderful.

What other vegetables could I add to this sandwich?

While this recipe is written for just the classic Cucumber Sandwich, you could easily add a sweet heirloom tomato, some super thinly sliced carrots, fresh spinach leaves, or even some protein like turkey or roasted chicken!
Cucumber is a great hydrating vegetable, so this sandwich is meant to be light, fresh, and hydrating on a summer day!

Storage:

Store the cream cheese spread in the refrigerator for up to 1 week.
