This Strawberry Kiwi White Chocolate Greek Yogurt Bark will knock your socks off! Creamy white chocolate is combined with fresh and zingy Greek yogurt for a smooth finish and then adorned with fresh strawberries, kiwis, coconut, and some granola for crunch! Ingredients:

  • Yogurt: I recommend full-fat Greek Yogurt for this recipe, for the best texture. I always have plain lying around (because it's what I prefer), but vanilla would be delicious in this recipe as well!
  • White Chocolate: You can find white chocolate bars in the baking aisle of your grocery store. Just one will do.
  • Fresh Fruit: For this yogurt bark recipe, I used fresh strawberries and kiwis. I thought this was so fun for Valentine's Day! But you could use blueberries, raspberries, or whichever fruits your family enjoys most.
  • Granola and Coconut: This is my favorite granola for this recipe! It's light and has just enough salt to pair perfectly with the sweet fresh fruit. Coconut flakes make for a fun texture moment in this! (And kiwis and coconut, come on!)

Steps to Make Greek Yogurt Bark:

  1. Line a quarter baking sheet with parchment paper.
  2. In a small bowl, melt the white chocolate in the microwave in 30 second intervals.
  3. Combine the melted chocolate with the yogurt and spread onto the baking sheet.
  4. Top with sliced strawberries and kiwis. (Add any other fruits you desire.)
  5. Finish with granola and coconut flakes and freeze until firm.

  4. Allow enough time for the bark to set. You'll need at least 2 hours for the bark to set completely. (3 is even better!)

Blueberries, chocolate chips (or even a chocolate drizzle), fresh or dried mango, raspberries, or crushed dried strawberries are always delicious in for yogurt bark!

Ingredients
  

  • 2 cups full-fat Greek yogurt
  • 1 white chocolate bar melted
  • ½ cup fresh strawberries sliced
  • ½ cup fresh kiwis sliced
  • ⅓ cup granola
  • 2 tablespoon coconut flakes

Instructions
 

  • Line a rimmed quarter baking sheet with parchment paper.
  • Combine melted white chocolate and Greek yogurt.
  • Spread yogurt mixture onto parchment paper.
  • Top with sliced strawberries and kiwis.
  • Finish with granola and coconut.
  • Place in the freezer for 3 hours, or until firm.
  • Chop into 12 pieces and enjoy cold.
  • Store in an airtight container or bag in the freezer.
