Coconut rice is the perfect side dish any summertime meal! It’s got a light coconut flavor, just enough to blend well with teriyaki sauce, pineapple, shredded chicken, black beans, you name it!
And its not as hard as you’d think! This recipe can be made in a rice cooker and consists of just 5 simple ingredients, a win win for a busy day!
Last time I made this recipe, I was preparing it as part of my very first edition of the A Toasted Crumb Entertaining Guides! I made this rice for the Late Summer Luau edition. Check it out!
To prepare this easy summer side-dish, you’ll need these 5 key ingredients:
- 2 cups of Jasmine Rice
- 1 13.5oz Can of Full-Fat Coconut Milk
- 1 1/2 cups of Coconut Water
- 1 Tsp of Salt
- 1/4 Cup of Unsweetened Coconut Flakes (optional)
Start with rinsing the rice a couple of times until the water runs clear, and add it straight to the bottom of your rice cooker.
Pour the coconut water and and coconut milk over the rice, stir, and hit the white rice option.
When the cooker goes off, allow the rice to sit for about 3-5 minutes longer before you open the lid.
In the meantime, toast the coconut flakes until they are just barely golden brown.
Once the rice is ready, fluff it with a couple of chopsticks, place it into a serving dish, and top with the toasted coconut flakes.
