Fluffy Dinner Rolls with Honey and Rosemary

These fluffy dinner rolls with honey and rosemary are the perfect balance of soft, buttery texture and fragrant herbal sweetness. Infused with fresh rosemary and a touch of honey, these rolls are golden on the outside, light and airy on the inside, making them an irresistible addition to any meal. Whether served alongside a holiday feast or as a comforting everyday bread, these rolls are sure to become a family favorite. Add them to your Thanksgiving spread next week!

Can you ever get enough of Thanksgiving rolls? There’s just something about them!

These are to die for! If you know me well, you know that I’ll add rosemary to almost anything. But the honey addition to these? Next level.

What ingredients are necessary for making Fluffy Dinner Rolls? 

Please refer to the recipe card for precise measurements. 

  • 4.5 cups all-purpose flour
  • 2 tbsp rapid rise, instant yeast
  • 1/3 cup granulated sugar
  • 1 tsp extra fine pink salt
  • 1 1/2 cups warm milk
  • 6 tbsp butter, softened
  • 1 tbsp honey
  • 2 tbsp fresh rosemary
  • 1 egg, room temperature
  • 2 tbsp melted butter
  • finishing salt

Is there any equipment necessary for making Fluffy Dinner Rolls? 

I like to use a baking sheet to make these rolls.

You could also use a round cake pan and nestle them into it, you may just need to roll them a hair smaller than this recipe recommends.

How to Prepare Fluffy Dinner Rolls with Honey and Rosemary:

Please refer to the recipe card for precise measurements. 

Combine 3 cups of flour, the yeast, sugar, salt, warm milk, the 6 tbsp of softened butter, egg, honey, and rosemary in the base of a stand mixer.

Using the dough hook attachment, mix the dough on the lowest speed until the flour is fully incorporated. Scrape the sides down as needed.

Increase the speed and continue mixing for 2 – 3 minutes.

Add 1 more cup of flour gradually at medium speed. A ball of dough should form. If additional flour is necessary, use the reserved 1/2 cup as needed.

When the dough is just starting to pull away from the sides of the bowl, stop the mixer.

Transfer the dough to a greased bowl and cover with plastic wrap. Let rest for 30 minutes at room temp.

Remove the plastic wrap, punch the dough down slightly and pinch off pieces of dough to form 24 2 – 3 inch balls.

Transfer the rolls to a greased cookie sheet (crowding is fine here) and cover with a towel or more plastic wrap. Let rest for 30 more minutes at room temp.

Preheat oven to 375°. Bake the rolls for 13 minutes.

Remove rolls and brush with hot butter and sprinkle with finishing salt.

Storage:

Dinner rolls won’t last pass dinner, but if they do – they’ll last for about 5 – 7 days at room temperature. I just store mine in a ziplock bag on the counter.

You can freeze rolls for up to 3 months if necessary.

What’s the best method for reheating dinner rolls?

I’ve found success with wrapping them in a slightly damp paper towel and microwaving them for 10 – 20 seconds.
