Sweet glazed carrots are kind of a go to for me for a lot of cozy dinners. They just go so perfectly with meatloaf, roasted chicken, pork chops, pretty much any comfort food.
Carrots, even in a sugary state, are still loaded with nutrients! Carrots have a ton of beta carotene in them, which is converted to vitamin A within the body. High levels of Vitamin A can contribute to healthier eyes, skin, and a healthier immune system. Beta carotene also acts as an antioxidant in the body which can help prevent aging and protect cells from harmful free radicals.
All these healthy facts about carrots and beta carotene are in no way saying that this is a healthy carrot recipe, but you should always be educated about the nutrients that are within the food you eat. Even if you add sugar and butter to it!
I love to eat carrots in a variety of ways, not just in this sweet and sugary way, but also just sauteed in a bit of olive oil, raw and chopped in a salad, or as a side with some hummus. And why? Because I ate carrots a lot growing up (most of the time like this), and learned to love the way they taste in a variety of other ways! Life is all about balance people!
For this sweet side treat you’ll need:
- 1 Lb Large Carrots, washed and peeled
- ½ cup Unsalted Butter
- ¼ Cup Brown Sugar
- ¼ Cup Maple Syrup
- 1 Tsp Cinnamon
- ½ Tsp Kosher Salt
- Fresh Parsley
Let’s get cooking!
- Wash and peel all of the carrots, removing the tops.
- Melt the butter over medium heat in a large saucepan and add the carrots, brown sugar and salt.
- Cook the carrots in the butter and sugar until the sugar melts into a syrup, usually about 3 minutes, tossing frequently to not burn the sugar.
- Add the maple syrup and cinnamon and cook until the carrots are soft, usually another 2 – 5 minutes depending on the size of the carrots. If you notice the syrup is getting thick but the carrots are not yet as soft as you’d like them to be, add water a tbsp at a time until you reach your desired consistency for the maple glaze.
- Remove carrots from the heat, place in a serving dish and top with fresh chopped parsley.
