1/2lbFresh Green Beanstrimmed
1/2 cupTri-Colored Quinoapre-cooked and chilled
1/2 cupChickpeaspre-cooked or soaked and chilled
1/2Of a Cucumber diced
1/4cupFeta Cheese omit if preparing a vegan version
Champagne Vinaigrette
1/4Red Onionminced
1/8cupExtra Virgin Olive Oil
1/8cupChampagne Vinegar
Juice and Zest Of 1 Meyer Lemon
1tbspFresh Dill
1tbspFresh Parsley
Kosher Salt/Black Pepperto taste
Instructions
Prepare the vinaigrette by whisking the ingredients together in the base of a large bowl.
Ass the salad ingredients on top of the vinaigrette and gently toss to coat. (If you're someone who lightly dresses their salad, prepare the vinaigrette in a mason jar with a lid, shake, and apply it to your salad separately.)
