Lamb Burger Greek Meal Prep Bowls

These Lamb Burger Greek Meal Prep Bowls are perfect for the busy start to the new year! Lamb and mint infused burgers are placed on lemon and fill infused Greek style orzo and accompanied with picked onions, cucumbers, tzatziki sauce, and kalamata olives. These Meal Prep Bowls are the perfect, healthy recipe to kick off good habits for the new year!

I love (and I mean BIG love) Greek flavors. Greek has to be one of my favorite cuisines. I Greek yogurt daily, and Tzatziki sauce probably weekly. These Lamb burgers are seasoned to perfection and laid atop the most delicious Greek style orzo. It’s seriously to die for. Let’s make it!

What ingredients are necessary to prepare the Lamb Burger Greek Meal Prep Bowls?

  • 1 lb Ground Lamb
  • 1 tsp Salt, divided
  • 1/2 tsp Black Pepper, divided
  • 1 tsp Ground Cardamom, optional
  • 1 tsp Garlic, minced
  • 1 tbsp Dijon Mustard
  • 1 egg
  • 2 tsp Olive Oil, divided
  • 2 tbsp Fresh Mint, minced
  • 1/2 lb Orzo Pasta
  • Zest of 1 Lemon
  • 2 tbsp Fresh Lemon Juice
  • 1/4 cup Feta Cheese, crumbled
  • 2 tbsp Fresh Dill, chopped
  • 1/2 cup Tzatziki Sauce, divided
  • 1/4 cup Picked Red Onion, divided
  • 2 Mini Cucumbers, sliced and divided
  • 1/2 cup Pitted Kalamata Olives, divided

Is there any equipment necessary for preparing the Lamb Burger Greek Meal Prep Bowls?

  • I love these meal prep containers from Amazon! (You will need 4.) They have a layered tray in the middle, allowing you to keep all of the ingredients that should stay cold on the top layer, and all of the ingredients that should be heated upon eating in the base layer. I used them when I did meal prepping for my neighborhood. They were so convenient for my single serve meal prepped dishes!
  • I also recommend some condiment cups with lids. Packaging the components in the condiment cups will help keep the flavors from all melding together during storage in the fridge. But the condiment cups aren’t absolutely necessary.
  • I like to use a cast iron grill pan for preparing the burgers, if I am not doing them on the grill. The grill lines are a nice touch.
  • Placing the prepared meat for the burgers onto a slip of parchment paper makes for easy transfer to the grill pan or grill.

How to Prepare the Lamb Burger Greek Meal Prep Bowls?

  1. Start with preparing the orzo pasta as directed on the package. Boil, drain, and rinse in cool water to stop the cooking process. Set aside.
  2. While the orzo is boiling, prepare the condiment cups for each meal prep bowl. This recipe creates 4 burgers, or 4 servings. So you will need:
    • 4 condiment cups of Tzatziki Sauce – 2 tbsp each
    • 4 condiment cups of Pickled Red Onion – 1 tbsp each
    • 4 condiment cups of Sliced Cucumbers – about 6 – 8 slices each
    • 4 condiment cups of Pitted Kalamata Olives – about 4 – 5 olives each
  3. Heat a cast iron grill pan over medium high heat until smoking hot.
  4. To prepare the Lamb Burger mixture, combine the ground lamb, season with half of the salt and pepper, 1 tsp of olive oil, the ground cardamom, garlic, Dijon mustard and the egg in a large bowl. Mix with your hands gently, don’t over work the meat.
  5. Fold in the fresh mint and divide the ground mixture into four parts. Flatten out the ground mixture into round patties (1/4″ to 1/2″ in thickness) and place onto small slips of parchment paper.
  1. Lightly spray the grill pan with cooking spray and place the lamb burger patties down onto the pan, peeling the parchment slip away when you place the meat down. Cook 4 – 6 minutes per side and then flip using a spatula, cooking again for another 4 – 6 minutes or until 160° internal temp.
  2. Remove burgers from the heat and cool.
  3. While the burgers are cooling season the orzo with the remaining olive oil (1 tsp), lemon zest and juice. Fold in the feta cheese and fresh dill by tossing lightly.
  1. Spoon 1/4 of the orzo mixture (about 1/3 cup) into the base of each meal prep container.
  2. Lay the lamb burger over the orzo.
  3. Place the second layer into the container and add the 4 condiment cups containing the picked red onion, tzatziki sauce, sliced cucumbers, and kalamata olives.
  4. Store in the refrigerator prepared for the week, for up to 3 – 4 days.
  5. Enjoy! (This meal prep is also delicious with a couple of miniature pieces of pita or naan bread.)

Do I need to make my own Tzatziki sauce for this recipe?

Absolutely not! Although, homemade Tzatziki is lovely. Here’s a recipe to make your own!

But for this recipe I usually just grab a container of Boar’s Head Tzatziki Sauce. I love this brand. It’s not bland like other store bought Tzatziki sauces and it stays nice and thick until I am ready to enjoy it.

You can find Boar’s Head Tzatziki in the deli section in your grocery store.

How about the Pickled Red Onions? Do I need to make them?

I prefer homemade Picked Red Onions! And they are so simple to make, here’s a simple tutorial! As soon as you make them once, you’ll always have a jar in your fridge! And they last for up to two weeks!

If you prefer to buy picked red onions at the store, you can usually find them near the pickles and olives in a jar.

Storage:

These meal prep bowls will keep sealed in an airtight container in the fridge for up to 4 days.

I do not recommend freezing these meal prep bowls.

Reheating:

To reheat, remove the first layer of the container, the condiment cups. Heat the orzo and burger for 60 – 90 seconds, or until the burger is warmed throughout.

Garnish with each of the condiment cup ingredients and enjoy!
