If you’ve been here for more than 5 minutes, you know I love Mediterranean flavors. So I just had to make a couscous salad with all of my favorite things!

Feta cheese, cucumbers, kalamata olives, tomatoes, and couscous come together in this gorgeous red wine vinaigrette for this perfect side dish (or even a great “Meatless Monday” or meal prep option)!

What do you need to make Mediterranean Couscous Salad with Red Wine Vinaigrette?

  • mini cucumbers
  • cherry tomatoes
  • kalamata olives
  • parsley
  • lemon juice
  • vinaigrette ingredients: red wine vinegar, Dijon mustard, garlic, olive oil, salt, fresh cracked pepper

Is there any equipment necessary for this couscous salad?

Not necessarily. A large bowl and a mini whisk will suffice.

One of these dressing shaker jars may be handy, if you aren’t a fan of whisking your vinaigrettes.

How to make Mediterranean Couscous Salad:

Refer to the recipe card for precise measurements.

  1. To prepare the vinaigrette, add red wine vinegar, lemon juice, garlic, and Dijon mustard to a small jar or bowl, slowly pour in the olive oil while continuously whisking. Season with the salt and pepper and set aside.
  2. In a serving bowl, combine the prepared couscous, cherry tomatoes, mini cucumbers, olives, cubed feta, and parsley.
  3. Pour the vinaigrette over the salad ingredients and toss lightly to combine. Feel free to lightly dress and allow guests to further dress their salad.

Storage:

This salad keeps very well in the fridge for several days. Just store it in an airtight container for 3 – 5 days.

  • 1 cup prepared couscous

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup mini cucumbers, sliced

  • 1/3 cup feta cheese, cubed

  • 1/4 cup kalamata olives, halved

  • 2 tbsp fresh parsley

  • Vinaigrette Ingredients:
  • 1 tbsp DIjon mustard

  • 2 tsp garlic, minced

  • 2 tbsp lemon juice

  • 2 tbsp red wine vinegar

  • 1/4 cup olive oil

  • 1/2 tsp salt

  • 1/4 tsp cracked black pepper

Directions
