Melon and Pistachio Breakfast Bowl

There’s nothing I love more on a hot day than a cool, fresh fruit bowl for breakfast. There’s just something that motivates me, makes me want to get outside, and be active when I start my day with fresh fruit and yogurt!

Pure Flavor’s new Solara ™ Mini Melons make the perfect ingredient for these breakfast bowls! They are personal sized melons that fit in the palm of your hand, making it easy to add your own custom ingredients each morning to really satisfy those summer cravings!

This particular morning, I decided to go with:

  • 1 Solara ™ Mini Melon, halved with a few melon balls removed
  • 8oz of Coconut Flavored Greek Yogurt
  • ¼ Cup Blueberries
  • 2 tablespoon Chopped Pistachios
  • 1 – 2 tablespoon Honey
  • Raw Sugar, optional
  • Supplies: Melon Baller

Preparing these melons each morning takes about 2 minutes, really!

The wonderful thing about these Solara ™ Mini Melons, as I mentioned, is they are teeny tiny and SUPER easy to work with. Sitting at just 500 grams, they are the perfect size for a personal meal or snack!

There aren’t many seeds at all in this melon, so you don’t have to worry about scooping out tons of junk while you’re trying to rush to get breakfast ready in the morning. One quick scoop, and you’ve got them!

For this recipe, I like to add a couple of melon balls on top of the yogurt for a pop of flavor, texture, and of course aesthetics.

Leave a good bit of melon in tact so you can finish off with a fresh, juicy bite of melon before breakfast is all over!

Now the fun part – build your own bowl!

Since these bowls are completely customizable, your ingredient choices can change as often as you’d like!

Being almost 6 months pregnant, I am trying to get in as many berries and nuts as possible throughout the day for an extra nutritional boost! So I decided to go with blueberries and pistachios for my bowl.

One of my absolute favorite flavors with melon? Coconut.

I LOVE coconut with fresh melon. It just reminds me of being on a beach somewhere, instead of getting ready for work and fixing breakfast in my kitchen. Puts me in a good mood, ya’ know?

So after I’ve removed my desired amount of melon balls, being sure to leave some fresh melon intact, I add the coconut yogurt directly into the bowl of the melon.

I just love that these melons are the perfect size for a single serving. They are a great sustainable, low-waste option. You get your very own “Me-Melon”! 

Time to accessorize!

Here’s the really fun part – adding all of your toppings. I sprinkled my blueberries and pistachios into my bowl, along with the melon balls that I removed. Then, of course I needed a little drizzle of honey and a couple of flakes of raw sugar for some sparkle. The perfect tropical treat!

And yes, you can absolutely eat both halves of this mini melon for breakfast! Either half your melon and enjoy both halves, or serve this alongside some pancakes, waffles, or other delicious brunchy type foods!

Cut a few of these melons in half, prepare them for filling, and lay out several different options for your group to customize their own bowls!

Here are some other fun yogurt and fruit combos for these melons!

  • Banana Split:                                     Vanilla Yogurt, Chopped Strawberries, Bananas, Peanuts
  • Tropical Paradise:                              Coconut Yogurt, Fresh Pineapple, Orange and Kiwi Slices, Slivered Almonds
  • Marvelous Melon:                             Plain Greek Yogurt, Solara Melon Balls, Watermelon, Cantaloupe, Agave Syrup
  • Chocolate Dipped Strawberry:      Chocolate Yogurt, Fresh Strawberries, Solara Melon Balls, Cacao Nibs or Chopped Dark Chocolate
  • Papaya and Melon Bowl:                  Vanilla Yogurt, Papaya, Solara Melon Balls, Clementines, Coconut Flakes, Honey

How to store the melons:

I prefer to cut these melons open right as I’m ready to eat them since they are so conveniently small.

Keep them on your counter (un-cut) for a couple of days, or in your fridge (un-cut) for up to a week.

Ingredients
  

  • 1 Solara™ Mini Melon halved with a few melon balls removed
  • 8 oz Coconut Flavored Greek Yogurt
  • ¼ cup Blueberries
  • 2 tablespoon Chopped Pistachios
  • 1-2 tablespoon Honey
  • Raw Sugar optional

Instructions
 

  • Cut the Solara™ Mini Melon in half and remove 3 - 4 melon balls from each half.
  • Scoop the yogurt into each melon half and top with the removed melon balls.
  • Add the blueberries and chopped pistachios, top with a drizzle of honey and a few flakes of raw sugar if desired.
  • Enjoy immediately.
