  • 1 cup breadcrumbs, Italian

Is there any equipment necessary for preparing Mini Mac and Cheese Bites?

You will need either a counter top deep fryer or a large, deep pan to fry these. I used my wok! It worked out great!

How to Prepare Mini Mac and Cheese Bites:

  1. Line a baking sheet with parchment and spread the mac and cheese out in a single layer. Place in the freezer for at least 30 minutes to firm up.
  2. In a deep, heavy bottomed pan, heat oil to 350°.
  3. Combine the panko, Italian breadcrumbs, grated parmesan, parsley and cayenne.
  4. Roll the mac and cheese into small 1 inch balls.
  5. Dredge into the flour, then the whisked eggs, then the breadcrumb mixture. Complete this with all of the mac and cheese balls.
  6. Gently lower into the oil and fry in until golden brown (about 2 -3 minutes per batch).
  7. Salt immediately out of the fryer, cool slightly, and enjoy right away!
