Is there any equipment necessary for preparing Mini Mac and Cheese Bites?
You will need either a counter top deep fryer or a large, deep pan to fry these. I used my wok! It worked out great!
How to Prepare Mini Mac and Cheese Bites:
- Line a baking sheet with parchment and spread the mac and cheese out in a single layer. Place in the freezer for at least 30 minutes to firm up.
- In a deep, heavy bottomed pan, heat oil to 350°.
- Combine the panko, Italian breadcrumbs, grated parmesan, parsley and cayenne.
- Roll the mac and cheese into small 1 inch balls.
- Dredge into the flour, then the whisked eggs, then the breadcrumb mixture. Complete this with all of the mac and cheese balls.
- Gently lower into the oil and fry in until golden brown (about 2 -3 minutes per batch).
- Salt immediately out of the fryer, cool slightly, and enjoy right away!
