I love these shrimp lettuce wraps! I’m always looking for lower carb options at the beginning of the new year. I don’t always eat low carb/high protein to try to lose weight (couldn’t hurt), but I just feel better when I eat this way. It may be all in my head, but I feel like I have more sustained energy, more mental clarity, and don’t feel hungry for longer periods of time. And that is everything I need (and then some) coming out of the holiday season!

What ingredients are necessary for preparing the Air Fryer Shrimp and Bell Pepper Lettuce Wraps?
- 1/2 lb Cleaned Cooked Shrimp, thawed
- 1 Red Bell Pepper, diced
- 1 Yellow Bell Pepper, diced
- 1/2 a Red Onion, diced
- 4 – 6 Leaves of Bibb Lettuce (or Green Leaf Lettuce)
- 2 tbsp Olive Oil
- 1 Orange, juiced
- 1 Lime, half juiced and the other half reserved for garnishing
- 1/2 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/2 tsp Chili Powder
- 1/4 tsp Onion Powder
- 2 tsp Agave, optional
Is there any equipment necessary for preparing Air Fryer Shrimp and Bell Pepper Lettuce Wraps?
- I recommend an air fryer with a basket for this recipe. You’ll want to have the option to give it a shake in the middle of the cook! A shelf air fryer is also perfectly fine, you’ll just need to stir or flip with a spatula in the middle of the cook.
How to Prepare Air Fryer Shrimp and Bell Pepper Lettuce Wraps?
- Start with preparing the marinade by combining the olive oil, fresh orange and lime juices, garlic powder, cumin, onion powder, and agave. Whisk to combine.
- Combine the red and yellow bell peppers and the onions in a medium bowl, pour over half of the marinade and stir to coat.
- Drop the peppers and onions into the air fryer and cook at 400° for 15 minutes, shaking once in the middle of the cook cycle.
- Pour the remaining marinade over the shrimp, add the shrimp to the basket and cook for 2 – 4 minutes or until warmed through.
- Stuff shrimp and pepper mixture into individual lettuce leaves, squeeze fresh lime juice over shrimp and enjoy!
Storage:
If possible, I don’t recommend storing already cooked shrimp if you can help it. Reheating shrimp multiple times can make it tough. I love this recipe prepared fresh each time, and with it being a “toss it and leave it” type of recipe hopefully you can make that work!
If not, the shrimp, bell pepper and onion mixture should be stored separately from the lettuce leaves to prevent wilting. Store in an airtight container for 1 – 2 days in the fridge.
Reheating:
If you need to reheat this recipe, you can reheat the mixture in the air fryer at 350° for 3 – 5 minutes or until warmed through.
You can also reheat this in the microwave in 30 – 60 second intervals, or until heated through. (I just don’t recommend reheating shrimp in the microwave at work. Just don’t be that guy.)
