Say hello to your new favorite indulgence—this not-so-healthy “healthy snack”! Sweet, tender dates are stuffed with a rich pistachio and cream cheese mousse, then crowned with crushed pistachios and a drizzle of agave. These simple to prepare, bite-sized treats are the ultimate afternoon pick-me-up when you crave something sweet but satisfying.
The combination of dates and pistachios is a match made in heaven. The natural caramel-like sweetness of the dates perfectly complements the earthy, roasted flavor of the pistachios. Think of this as a fun twist on the classic Italian dessert Pistachio Cream—a luxurious filling that transforms simple dates into something extraordinary.
What ingredients are needed for preparing Pistachio Cream Stuffed Dates?
- 1 cup Prepared Instant Pistachio Pudding (Box of Instant Pistachio Pudding + 2 cups Whole Milk)
- 3 oz Cream Cheese, softened
- 2 tbsp Evaporated Milk
- 12 oz Pitted Medjool Dates
- 1 tbsp Crushed Pistachios
- 2 tsp Agave Nectar (or Maple Syrup)
Is there any equipment necessary for preparing the Pistachio Cream Stuffed Dates?
You will need medium sized bowl and a whisk to preapre the pistachio cream filling.
I also highly recommend use of a piping bag, tip, and coupler to pipe the filing into each date. (This isn’t absolutely necessary, it just makes for a prettier presentation.)
How to Prepare Pistachio Cream Stuffed Dates?
Prepare the Pistachio Cream – Prepare the instant pistachio pudding according to the package directions and remove 1 cup for this recipe. (Reserve the rest, it’s delicious!) Combine 1 cup of the prepared pistachio pudding with the softened cream cheese and evaporated milk. Whisk vigorously to combine.
Stuff the Dates – Cut a slit into each date to open it, do not slice it in half. Place the pistachio cream into the piping bag and pipe the cream into each date. You’ll pipe about 2 tsp into each date dependent on size.
Add Some Sparkle – Garnish the dates with crushed pistachios and a drizzle of agave nectar (or maple syrup). Enjoy!
Storage:
These dates will keep for up to 1 week in the fridge sealed well in an airtight container.
I promise, there’s nothing better at that 2:30 PM slump to run to the fridge to grab one of these babies! Perfect light, sweet treat to keep you chugging though your afternoon.
