For Cheri’s recipe, you’ll need the following ingredients:

  • Protein: chicken
  • Vegetables: onion, spinach
  • Sauces and Aromatics: garlic, ginger, coconut milk, peanut butter, soy sauce, honey, sriracha, lime juice
  • Optional: jasmine rice, cooked noodles, peanuts, green onion

To make Slow Cooker Peanut Chicken, Cheri recommends the following equipment:

Slow Cooker Peanut Chicken is an easy Crock Pot dinner recipe so good served over rice with chopped peanuts!

Ingredients

  • 2.5 lbs boneless, skinless chicken thighs, cut into 1 to 2 in pieces

  • 1 onion, diced

  • 6-7 cloves of garlic, minced

  • kosher salt

  • pepper

  • 1 can coconut milk, shake before opening

  • 1 cup creamy peanut butter

  • 3/4 cup soy sauce

  • 1/3 cup honey

  • 2 – 4 tbsp sriracha

  • 2 tbsp lime juice

  • 1 – 2 tbsp grated ginger or ginger paste, optional

  • 1 bag spinach, roughly chopped

  • Optional
  • jasmine rice or cooked noodles

  • Optional Garnishes
  • chopped peanuts

  • sriracha

  • green onion

Directions

  • Put the chicken, onion, garlic, kosher salt, and pepper in the slow cooker.
  • Put the coconut milk, peanut butter, soy sauce, honey, sriracha, lime juice, and ginger (if using) in a bowl and whisk until combined, which may take a minute or two.
  • Pour this mixture over the chicken, stir, and turn the slow cooker on low for 6 to 8 hours.
  • About 30 minutes before serving stir in the spinach, it will cook down a lot, stir a few more times.
  • Serve over rice or noodles with chopped peanuts, more sriracha, and/or green onions if desired.
