I asked Cheri if she'd be willing to submit a recipe for this month's Crumb Connections feature; she agreed and sent in this incredible recipe for Slow Cooker Peanut Chicken! Perfect for the cozy season ahead! Check it out!

For Cheri's recipe, you'll need the following ingredients:
- Protein: chicken
- Vegetables: onion, spinach
- Sauces and Aromatics: garlic, ginger, coconut milk, peanut butter, soy sauce, honey, sriracha, lime juice
- Optional: jasmine rice, cooked noodles, peanuts, green onion
To make Slow Cooker Peanut Chicken, Cheri recommends the following equipment:
- a slow cooker, that's it! Easy peasy!

Slow Cooker Peanut Chicken
Ingredients
- 2.5 lbs boneless, skinless chicken thighs, cut into 1 to 2 in pieces
- 1 onion, diced
- 6-7 cloves of garlic, minced
- kosher salt
- pepper
- 1 can coconut milk, shake before opening
- 1 cup creamy peanut butter
- ¾ cup soy sauce
- ⅓ cup honey
- 2 - 4 tablespoon sriracha
- 2 tablespoon lime juice
- 1 - 2 tablespoon grated ginger or ginger paste, optional
- 1 bag spinach, roughly chopped
Optional
- jasmine rice or cooked noodles
Optional Garnishes
- chopped peanuts
- sriracha
- green onion
Instructions
- Put the chicken, onion, garlic, kosher salt, and pepper in the slow cooker.
- Put the coconut milk, peanut butter, soy sauce, honey, sriracha, lime juice, and ginger (if using) in a bowl and whisk until combined, which may take a minute or two.
- Pour this mixture over the chicken, stir, and turn the slow cooker on low for 6 to 8 hours.
- About 30 minutes before serving stir in the spinach, it will cook down a lot, stir a few more times.
- Serve over rice or noodles with chopped peanuts, more sriracha, and/or green onions if desired.
