Every good party needs an impressive veggie spread!

This Veggie Tray with Dip Trio is a gorgeous assortment of fresh vegetables and 3 incredible dips – a Classic Vegetable Dip, a zesty Caramelized Onion and Harissa Dip, and a fresh Avocado Hummus. With flavors from all over the map, there’s something to please everyone at your party!

I love to make “extra” charcuterie and crudité spreads when I have parties. They’re a fun conversation piece, they feed a ton of people, and they’re a great way to express your creativity! Here are a few I’ve created in the past!

This Veggie Platter with Dip Trio is the perfect snack for your crew! Celery, carrots, bell peppers, cucumbers, and more with creamy, zesty, and herby dips. Give them each a try and figure out which one is your favorite!

What do you need to create a vegetable platter?

Every good vegetable platter should have a wide assortment of colors and textures. For this platter, I went with:

  • Cauliflower (purple and yellow are fun!)
  • Mini Peppers
  • Mini -Cucumbers
  • Broccolini
  • Baby Carrots
  • Celery
  • Cherry Tomatoes
  • Radishes
  • Snap Peas
  • Endives

For the Dip Trio, you’ll need the following ingredients:

Classic Vegetable Dip

Caramelized Onion and Harissa Dip

Avocado Hummus

  • Greek yogurt
  • mayo
  • lemon juice
  • fresh dill
  • garlic powder, onion powder
  • paprika
  • dried parsley
  • salt, pepper
  • olive oil
  • sweet onions
  • water
  • Greek yogurt
  • lemon juice
  • harissa paste
  • garlic powder
  • salt, pepper
  • avocados
  • canned chickpeas
  • tahini
  • olive oil
  • Greek yogurt
  • cilantro
  • lemon juice
  • garlic cloves, cumin, and chipotle pepper
  • crushed red pepper, salt, pepper

What sized charcuterie board do you need for this Veggie Tray and Dip Trio?

The board I used for this was a gift from a sweet friend and it was about 24 inches X 18 inches. This was the perfect size for all of my dip bowls and assorted veggies to feed about 10. Pick a board that is proportionate to your bowls and you should be good!

And of course scale this recipe down and use a smaller board if you’ve got a smaller crew!

Storage:

These dips will store just fine in airtight containers in the fridge for 3 – 5 days. (For the avocado hummus, attempt to block it from as much oxygen as possible by placing a plastic wrap over the top of the hummus. Alternatively, you can squeeze fresh lemon juice over it or just kick it up in the recipe and that will also help keep it green and pretty for longer.)

Ingredients

  • Vegetables
  • Cauliflower (purple and yellow are fun!)

  • Mini Bell Peppers

  • Mini Cucumbers

  • Broccolini

  • Baby Carrots

  • Endives

  • Dip #1: Classic Vegetable Dip
  • 1 1/2 cups Plain Greek Yogurt

  • 3/4 cup Mayo

  • 1 Tbsp Lemon Juice

  • 2 Green Onions, chopped

  • 1/4 cup Fresh Dill, chopped

  • 2 tsp Garlic Powder

  • 1 1/2 tsp Paprika

  • 1/2 tsp Dried Parsley

  • 1/2 tsp Onion Powder

  • 1/2 tsp Salt

  • 1/4 tsp Black Pepper

  • Dip #2: Caramelized Onion and Harissa Dip
  • 2 tbsp Olive Oil, divided

  • 2 Onions, sliced

  • 1 tbsp water

  • 1 1/2 cups Plain Greek Full-Fat Yogurt

  • 2 tbsp Lemon Juice

  • 1 -2tbsp Harissa Paste (plus more for garnish, if desired)

  • 2 tsp Garlic Powder

  • 1 tsp Salt

  • 1/4 tsp Black Pepper

  • Dip #3: Avocado Hummus
  • 2 avocados, peeled and cored

  • 1 can chickpeas, drained

  • 1 tsp salt

  • 1/3 cup tahini

  • 1/4 cup olive oil

  • 1/4 cup Greek yogurt

  • 2 tbsp lemon juice

  • 1/2 cup cilantro

  • 3 cloves garlic

  • 2 tsp cumin

  • 1/2 tsp chipotle powder

  • 1/2 tsp crushed red pepper, optional

Directions

  • Start with preparing Dip #2: Caramelized Onion and Harissa Dip
  • Slice the onions into thin strips. Add olive oil and onions to a pan over medium heat and cook for 20 minutes, stirring every 5 minutes. On the last stir, deglaze the pan with 1 tbsp of water before stirring. Let finished onions cool prior to preparing dip.
  • Combine caramelized onions, yogurt, lemon juice, harissa paste, garlic powder, salt, and black pepper in a bowl. Stir to combine.
  • Top with more harissa if desired and enjoy with vegetables, pita, or veggie chips.
  • Prepare Dip #1: Classic Vegetable Dip
  • Combine yogurt, mayo, lemon juice, and dried spices. Stir to combine.
  • Fold in fresh herbs and enjoy.
  • Prepare Dip #3: Avocado Hummus
  • Add the chickpeas and salt to a food processor a pulse until you see a fine sand-like texture.
  • Add the avocados, tahini, yogurt, lemon juice, cilantro, garlic, cumin and chipotle powder to the food processor and blend until smooth.
  • Slowly drizzle the olive oil in as the hummus is blending.
  • Garnish with a drizzle of olive oil and sprinkle of crushed red pepper.
  • Vegetable Platter:
  • Arrange vegetables around each dip bowl, filling in empty gaps with endives (or romaine lettuce).

Notes

  • If you have the time, chill the dips slightly before serving.
