Ingredients:

  • Chicken: For this recipe, I've used chicken breast, but you could also use boneless skinless chicken thighs. Traditional jerk recipes call for bone in chicken, but using a boneless cut of chicken helps make assembly quick!
  • Herbs, Sauces, and Spices for the Marinade: For the marinade and sauce, you'll need olive oil, limes, soy sauce, green onions, thyme, garlic, fresh ginger, a scotch bonnet (or habanero pepper), black pepper, salt, allspice, nutmeg, cinnamon, and orange juice.
  • Sour Cream: For the creamy jerk sauce!
  • Grilled Tortillas: You'll want to get the wrap tortillas or burrito sized tortillas. You can also layer two regular sized tortillas together if necessary.
  • Crisp Green Lettuce and Mango Salsa: I'm biased, but I'd highly recommend my Sweet and Spicy Mango Salsa with this recipe! It's the perfect pairing with the jerk marinade on this chicken!

Steps to Prepare:

STEP 1: Prepare the marinade

Now, don't skimp on jerk marinade. This may be a quick recipe, but we aren't skipping any ingredients in this marinade! Jerk is a gorgeous, complex flavor that is rooted in Jamaican culture, and it should be properly appreciated.

Combine ¼ cup olive oil, the juice of a small lime (about 3 tbsp), 2 tablespoon soy sauce, 2 full green onions (roughly chopped, discard the roots), 1 teaspoon of thyme, 1 garlic clove, 1 inch of fresh ginger (shaved and chopped), 1 scotch bonnet pepper (or habanero if you cannot find scotch bonnets, seeded), ½ teaspoon of black pepper, ½ teaspoon of allspice, ¼ teaspoon nutmeg, ½ teaspoon cinnamon, and the juice of half of an orange in the base of a small blender. Blend until completely pulverized.

Remove ⅓ cup of the marinade and set aside.

STEP 2: Prepare the chicken

Stab the chicken breasts with a fork or sharp knife all over. (This will help the marinade soak into the chicken.) Pour the remaining marinade over the chicken.

If you have a little time - cover the chicken with plastic wrap and let it marinate in the fridge for 1 hour.

If you're in a rush, that's okay! The holes you made in the chicken will help speed up the marinating time.

STEP 3: Grill the chicken

Preheat the grill to medium high heat and grill the chicken for 4 - 6 minutes per side, or until it reaches 165° internal temperature.

Remove the chicken from the grill and let it rest for 5 minutes before slicing.

Two grilled chicken breasts on a gray surface, seasoned and browned with grill marks. They appear juicy and well-cooked, suggesting a savory flavor. Lightly charred spots add texture to the golden-brown skin.

STEP 4: Prepare the sauce

To make the Creamy Jerk Sauce, combine the ⅓ cup of marinade that you set aside with ⅓ cup of sour cream. Blend until a viscous sauce develops. (If you need to thicken the sauce, add 1 tablespoon of sour cream at a time until your desired consistency is achieved.)

STEP 5: Build the wrap

Grill the tortillas (if desired), and add the chicken, mango salsa, creamy jerk sauce, and then the lettuce.

Wrap tightly and slice on the bias.

Enjoy!
