Whipped Feta and Cranberry Crostini

Whipped feta is combined with spiced cranberries and rich balsamic glaze and presented on a sweet little toasted crostini. These Whipped Feta and Cranberry Crostini will make a showstopper of a dish at your Christmas get together!

I made these Whipped Feta and Cranberry Crostini’s a few months back while working with a brand who had sent me some dishware and just had to add them to my ‘So You’re Having a Holiday Party?’ E-Book! They are so fun and gloriously tart and delicious! There are few tastes like the combination of feta and cranberry! I hope you enjoy!

What ingredients are necessary for preparing the Whipped Feta and Cranberry Crostini?

  • 8oz cranberries
  • 1/4 cup orange juice
  • 2 tbsp maple syrup
  • 1/2 tsp nutmeg
  • 8 oz feta cheese (block, chopped)
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla
  • 1/4 tsp crushed red pepper
  • 1 tbsp olive oil
  • 1/4 cup balsamic glaze
  • 1 package of crostini slices (16 – 20)

Is there any equipment necessary for preparing the Whipped Feta and Cranberry Crostini?

How to Prepare the Whipped Feta and Cranberry Crostini:

  1. In a pot over medium-high heat, combine the fresh cranberries, orange juice, maple
    syrup and nutmeg. Gently heat until the cranberries start to burst. Remove from heat
    once 1/4 of them have burst.
  2. Add the feta, Greek yogurt, vanilla, crushed red pepper, and olive oil to a food
    processor and blend until smooth and whipped.
  3. Drizzle the crostini slices with a little more olive oil and broil in the oven until lightly
    toasted.
  4. Top each crostini slice with a dollop of whipped feta and a spoonful of the spiced
    cranberries.
  5. Drizzle with balsamic glaze.

Storage:

I recommend storing the ingredients for these separately if you are preparing ahead of time or storing for leftovers.

Store the whipped feta in one airtight container for 3 – 4 days and the cranberries in another. The cranberries will keep up to 1 week.
