- Yogurt: I recommend full-fat Greek Yogurt for this recipe, for the best texture. I always have plain lying around (because it's what I prefer), but vanilla would be delicious in this recipe as well!
- White Chocolate: You can find white chocolate bars in the baking aisle of your grocery store. Just one will do.
- Fresh Fruit: For this yogurt bark recipe, I used fresh strawberries and kiwis. I thought this was so fun for Valentine's Day! But you could use blueberries, raspberries, or whichever fruits your family enjoys most.
- Granola and Coconut: This is my favorite granola for this recipe! It's light and has just enough salt to pair perfectly with the sweet fresh fruit. Coconut flakes make for a fun texture moment in this! (And kiwis and coconut, come on!)

Steps to Make Greek Yogurt Bark:
- Line a quarter baking sheet with parchment paper.
- In a small bowl, melt the white chocolate in the microwave in 30 second intervals.
- Combine the melted chocolate with the yogurt and spread onto the baking sheet.
- Top with sliced strawberries and kiwis. (Add any other fruits you desire.)
- Finish with granola and coconut flakes and freeze until firm.

Tips for Making Greek Yogurt Bark:
- Use full fat yogurt. Full fat yogurt yields a better texture for bark, as well as an improved taste.
- Slice the fruit thin. Thinly sliced strawberries and kiwis lay best into the yogurt, making it easier to chop. You want the texture to come from the granola and coconut here.
- Don't forget to line the pan. Placing parchment or wax paper down on the baking sheet will make removal and clean up a breeze!
- Allow enough time for the bark to set. You'll need at least 2 hours for the bark to set completely. (3 is even better!)
