Mini Sweet Pepper Steak Sandwiches

Steak sandwiches just scream summer, don’t they? There is just something about a juicy charred steak, grilled veggies, melty cheese, and a soft baguette that just represents the season so well.

How do you make a steak sandwich even better? By adding grilled Aurora Bites Mini Sweet Peppers from Pure Flavor!

Aurora Bites Mini Sweet Peppers are the perfect little piece of produce heaven! They are sweet, zesty, bright, and bold. They are the perfect ingredient to grill up for a sandwich, toss into a salad, or chop up for your morning eggs.

Pure Flavor carries a ton of high-quality greenhouse grown veggies, and they are quite easy to find! I get my Pure Flavor vegetables at Target or Costco. A few of my other favorites, their Sangria Tomato Medley and their Poco Bites Cocktail Cucumbers.

I decided to pair my Aurora Bites Mini Sweet Peppers with some grilled onions to add an extra kick to my marinated steak sandwiches!

These steak sandwiches have a smoky taste that went just perfectly with the bold flavor of the Aurora Bites. I add a little bit of melted provolone cheese on top of the steak before adding the peppers. The taste of the smoked provolone with these peppers is incredible!

For these tasty sandwiches you will need:

  • 8 oz Pure Flavor® Aurora Bites Mini Sweet Peppers
  • 1 Yellow Onion
  • 1 lb. Flat Iron Steak
  • Some marinating ingredients for your steak: 3 garlic cloves, 1 lemon, soy sauce, olive oil, Worcestershire sauce, liquid smoke, crushed red pepper, dried basil, kosher salt, and black pepper
  • Smoked Provolone Cheese
  • 4 Baguettes, halved and toasted
  • Roasted Garlic Aioli

Let’s get started!

  1. About 4 hours before barbeque time you will want to marinate your steak.
  2. Add the steak and all of the marinade ingredients to a plastic bag, and let it marinate in the refrigerator at least an hour (up to 4 hours if you’ve got the time). Don’t marinate it much longer than the four hours, or it may come out too salty.
  1. Start preheating your grill to 400° while you prep your veggies.
  2. Chop the Aurora Bites Mini Sweet Peppers and yellow onion into thin strips.
  3. Add a tablespoon of olive oil to a wide pan, add the peppers and onions, and season generously with salt and pepper.
  1. Heat the pan over medium-low heat, cooking the peppers and onions for 30 minutes, stirring occasionally.
  1. While the peppers and onions are cooking, grill the steak at 400° for 5 – 7 minutes per side, undisturbed.
  2. Once the steak reaches 140° F, or medium, remove it from the grill. Allow the steak to rest for at least 5 minutes before you cut into it. Letting a steak rest helps the juices redistribute and keep it from drying out.  
  3. Slice the steak against the grain into strips for the sandwiches.
  1. Add a thin layer of roasted garlic aioli to each baguette, a few strips of steak, and a slice of provolone cheese.
  1. Place the sandwiches back on the grill or under the broiler in your oven for about 30 seconds to let the cheese melt.
  1. Add a hearty helping of grilled Aurora Bites Mini Sweet Peppers and onions on top of the melted cheese, close the sandwich, and gently press down.
  2. Serve with crispy steak fries, au jus for dipping, and extra fresh sweet peppers!

I've got leftovers; can I store these sandwiches?

Yes! These sandwiches keep very well!

Wrap them in parchment paper and place them in a bag to store in the refrigerator. Just reheat them in a 400° oven for about 5 minutes when you are ready for leftovers!

I sent my soon to be hubby to work with a warm sandwich the following day, and he was quite the happy camper!

The best part – the peppers don’t get soggy AT ALL!

What other types of things can I make with Aurora Bites Mini Sweet Peppers?

There are a ton of different uses for mini sweet peppers! I enjoy chopping mine up raw and throwing them in chilled salads! The sweet taste pairs perfectly with an herby salad!

Their bright color makes them perfect for serving them on a party platter and some delicious buttermilk ranch dressing or blue cheese.

The possibilities with these little gems are endless!

Ingredients
  

Steak Marinade

  • 1 lb Flat Iron Steak
  • 3 Garlic Cloves minced
  • Juice of 1 Small Lemon
  • ½ cup Soy Sauce
  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoon Worcestershire Sauce
  • 1 tsp Liquid Smoke
  • ½ teaspoon Crushed Red Pepper
  • ½ teaspoon Dried Basil
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Black Pepper

Sweet Peppers u0026amp; Onions

  • 8 oz PureFlavor® Aurora Bites Mini Sweet Peppers sliced
  • 1 Yellow Onion sliced
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 tsp Black Pepper

Additional Ingredients

  • 4 slices Smoked Provolone Cheese
  • 4 Baguettes halved and toasted
  • Roasted Garlic Aioli

Instructions
 

Marinate the Steak:

  • At least 1 hour before grilling time, place the steak and all marinade ingredients in a plastic bag. Allow the steak to marinate in the refrigerator for at least 1 hour, but as much as 4 hours.
  • Preheat your grill to 400° while you prep the vegetables for the steak sandwich.

Prep the Veggies:

  • Slice the Aurora Bites Mini Sweet Peppers and onions into thin strips.
  • Add a tablespoon of olive oil to the bottom of a wide pan, add peppers and onions and season generously with salt and pepper.
  • Heat the pan over medium-low heat cooking the peppers and onions for 30 minutes, stirring occasionally.

Grill the Steak:

  • Remove the steak from the marinade, discard the left over marinade.
  • While your vegetables are cooking, grill the steak for 5 – 7 minutes per side undisturbed on a 400° grill.
  • When the steak has reached 140°, or medium, remove it from the grill and allow it to rest for 10 minutes.
  • Slice the steak (against the grain) to create thin strips for each sandwich.

Dress the Sandwiches:

  • Spread a thin layer of Roasted Garlic Aioli on each of the baguettes.
  • Add a few strips of steak and a slice of smoked provolone cheese.
  • Place the sandwiches back on the grill or under the broiler of your oven for 30 seconds to melt the cheese.
  • Add a hearty helping of peppers and onions to each sandwich, close the sandwich, and gently press down.
  • Serve with crispy steak fries, au jus for dipping, and extra sweet peppers!
